Basic Fennel Dressing

Basic Fennel Dressing


1/2 cup olive oil
1/2 cup peanut oil
1/2 cup red wine vinegar
1/2 cup white vinegar
1 teaspoon sugar or more to taste
1 tablespoon dry mustard (Coleman’s)
1 teaspoon fennel, ground
2 tablespoons lemon juice
1/8 cup dried parsley
salt and pepper to taste


Blend the oils and the vinegars. Add a little sugar, mustard, and fennel. Add some lemon juice, parsley, salt, and pepper.
