Rice with Garlic

Rice with Garlic

INGREDIENTS:

1 1/2 cups rice
5 cloves garlic
A small bunch of parsley, minced
3 egg yolks
Olive oil
Salt and pepper to taste
Freshly grated Parmigiano

PREPARATION:

Boil the rice in abundant lightly salted water until it reaches the chewy al dente stage. While this is happening, crush the cloves of garlic and whisk the yolks in a bowl with them. When the rice is done drain it, and stir it immediately into egg yolks — the heat of the rice will cook them — seasoning everything to taste with salt, pepper, and a drizzle of olive oil. Finally, add them minced parsley and serve, with grated cheese for those who want it.
