Classic Pumpkin Pie

Pumpkin Pie


3 eggs
1/2 cup granulated sugar
1/2 cup brown sugar
1 Tablespoon flour, rounded
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice (optional)
1 1/2 cups canned pumpkin
1 1/4 cups hot milk


Beat eggs with electric mixer. fold in granulated sugar, brown sugar, flour, salt, and cinnamon. (If a darker pie is desided, add 1/2 teaspoon allspice.) Add pumpkin and mix well. Gradually add hot milk. Pour into pie shell. Bake at 450 for 15 minutes, then decrease heat to 350 and bake for 30 minutes longer.
